DESCRIPTION:說明
Natajen-S is an antimycotic food additive used to control spoilage due to yeasts and molds in a variety of foods. It has been used globally in the cheese ,juice ,wine and meat industries. The
active ingredient ,Natamycin ,also known as Pimaricin ,is naturally produced by Streptomyces
natalensis. Natamycin is manufactured via fermentation ,purified ,crystallized ,dried and
blended with salt to give a 50% concentration ofNatamycin. This standardized product is sold as
Natajen-S.
Natajen-S has very little solubility in water. A solution or suspension of Natajen-S is stable at
ambient temperatures and is not affected by short time exposures to 100℃ temperatures.
Natajen-S is effective in the pH range of 3 to 9 and performs optimally between pH 5 and 7.

Natajen-S is an off white to light cream colored powder with a mild odor.It is standardized with
salt to give 50% Natamycin. The Natamycin in Natajen-S is food grade and meets the specifications required by the FAO/WHO ,FCC and EU.

The regulations governing the use of Natamycin vary from country to country. Local food regulations should always be consulted regarding its use in various foods. In the USA ,Natamycin may be used in cheese 、yogurt 、cream cheese 、sour cream ,cottage cheese ,shredded cheese ,salad dressing and tortillas under 21 CFR 172.155 and 21CFR 170.30. Natamycin is also approved for use on shredded cheese in Australia and New Zealand. In the EU,Natamycin is approved for the surface treatment of hard ,semi-hard and semi-soft cheeses and dried cured sausages.

USAGE LEVELS AND APPLICATIONS;使用水平和應用
Where regulations permit ,recommended usage levels ofNatajen-S would usually be between 5
to 50 ppm. Exact dosage levels will depend upon application method ,nature of the food products to be treated ,food processing conditions ,and microbial load. Natamycin is not soluble in water and requires continuous agitation of suspension during spraying of slurry or dipping of cheese and meat products. Natajen-S can be used in a variety of applications including:
• Direct addition to products like yogurt ,sour cream ,cottage cheese ,and cream cheese. ﹒Direct
addition to fruit juice ,fruit pulp ,and fruit preparations.
• Direct spraying onto shredded cheese and block cheese.
• Direct spraying onto processed meats such as salami and other sausages.
• Direct spraying or surface treatment of fish products frozen lobster and spawn.
• Surface treatment of cheese by dipping block cheese in a suspension of Natajen-S and also
incorporating Natajen-S into an emulsion coating ,which is applied onto the cheese.

STORAGE:儲存
Natajen-S can be stored at ambient temperature. It is stable for more than two years from the
date of manufacture when stored in the original container in dry conditions at 20 °c and away
from direct sunlight and ultraviolet light
